Parsnips and parsley root are very healthy
The two varieties have in common that they are very healthy. Parsnips “contain a number of minerals, such as potassium and B vitamins. In addition, the fiber and pectin content is remarkable, ”says the provincial association.

According to experts, parsley root is rich in vitamin C, provitamin A, B vitamins and the minerals potassium, calcium and iron. The winter vegetable is not only suitable as a soup spice, but also for stews and fine cream soups.

Parsnips taste good in soups and stews, raw as a salad, as a snack in between, or steamed as a vegetable side dish. They can also be made into a delicious puree with potatoes.

The provincial association has another tip: Parsnips can be pressed together with apples, beetroot and other root vegetables to form a fresh juice that strengthens the immune system. "A glass of this juice every day protects against colds". (ad)
